How do you like your chicken wings? There are all kinds of ways to have them. Some like them hot. Some like them with BBQ sauce. Some like them plain and baked. I like them dancin’ the cha-cha. These Spicy Mango Chicken Wings are just the bomb dot com. The layers of flavor here are so subtle, yet hit you like a ton of bricks. You’ll wonder where they’ve been all your life. And don’t you dare put any ranch on them!
I love me some chicken wings! Like seriously, picture me as John Bender in The Breakfast Club at the end of the movie, walking with pride across the football field and raising his fist victoriously. Yeah. That was me. In my kitchen, after eating one of these. And me again after seeing my husband’s face when he tried one. #winning
Not only are chicken wings and drumsticks on their own just simply amazing, but it goes deeper for me. During my time in the Coast Guard, no matter where we would pull into port stateside, there was always a Buffalo Wild Wings. I don’t know why the command always decided on that location as one of our drop-off points when we weren’t on duty, but needless to say most of my body weight consisted of sweet tea and chicken wings during port-calls. Many of my favorite memories were also created during those times. So for me, it’s more than a chicken wing.
Travis on the other hand, isn’t a huge fan of chicken wings. Or I should say, he wasn’t. He always tells me they are just too much work for not enough meet. But these farm fresh, marinaded, bundles of goodness took it upon themselves to fall off the bone for him. The meat was so tender you could get all of the meat in one bit. GAH! SO GOOD!! Talk about making a believer out of someone… I’ve also now gotten requests for that marinade to appear more frequently in our meals.
Which is funny since I came up with it on a wing and a prayer… 😏

How to make a Marinade?
Marinades are actually a lot easier than you would think. Firstly, you need an acid. So, in this case both the lime juice and the mangoes act as an acid. I knew I wanted the mango flavor to be the forefront of the dish. But I was also thinking what other acid is a bit more acidic that could lead to the tenderizing of the meat. Lime presented itself as the perfect option for tenderizing and a known pairing companion to mango. Then you add an oil of sorts. This helps for the grilling or cooking process and to actually get the mixture incorporated into itself and not break apart. You should always have multiple levels of flavor. Adding spices as well as additional sauces such as hot sauce, sesame oil, etc. will assist in adding depth to the marinade. Some will tell you not to put salt in a marinade. I don’t fully agree with that. You need to know what you’re working with and can always add it later. But given the variation I had here in this marinade, I knew I needed a component to marry the sweet to the spicy. In this case the salt acted as a perfect middle man to do so.
Where do Chicken Wings come from?
Okay, you could certainly be shaking your head at me right now or giving me the “come on” face… I know it too well. I give it to my children all the time. But hear me out. There is a severe lack of knowledge in society today about our food, where it comes from, what is done to it, etc. So let’s clear a few things up. There are two types of chickens. There are meat birds and then there are laying hens/roosters. Meat birds are raised for exactly that, their meat. Those are the birds you get from the store and the kind delivered to your door when you order through places like Grass Roots Coop. Those are where you get your wings.
Then there are laying hens and roosters. Those birds are utilized only for their eggs. While you can technically eat them, they are going to be more tough than a meat bird. Though they may look similar to meat birds, their energy is going towards creating an egg to later be fertilized (or not) by the rooster. They tend to be more active, have a longer life span, and use their wings. Meat birds in contrast, don’t actually use their wings and grow much more quickly than a laying hen does. A meat bird’s life span is generally only about 8 weeks before they start to become too large for their bone structure to handle. Laying hens, can live for years. They’re the same – but different.

These delectable wings are going to fly away with your heart and taste-buds. The sweet, savory and spicy layered flavor profile is going to be the star to any summer BBQ get together.
- 2 packages of Grass Roots Coop's Chicken Wings - 6-8 pieces per package
- 2 fresh mangoes
- Juice of 1 lime
- 1 Tablespoon Sriracha
- 2 Tablespoons EVOO
- 2 cloves of garlic
- 1 chunk of raw ginger - approximately the size of the top of your thumb
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- Cilantro for garnish
- Skin and de-seed mangoes.
- Add mangoes, lime juice, Sriracha, EVOO, spices, garlic, and ginger to blender. Blend until thick and smooth.
- Add blended mixture with chicken wings to a Ziplock bag. Shake until chicken is well coated with marinade.
- Place bag in a bowl or on a plate and refrigerate for approximately 12 hours.
- Pre-heat grill to the grill setting - typically a temperature range of 300-400 degrees F.
- Grill on each side for approximately 7 minutes or until cooked through, flipping only once for grill marks.
- Plate and top with fresh chopped cilantro. Enjoy!
